Raw cakes are very popular now. They are gluten free, dairy free and mostly sugar free. Internet is full of recipes but some of them are bit complicated.
Here is simple recipe for raw cake.
Acai blueberry raw cake recipe
Servings: min 4
Time: 40 min + freezing time 1-3 h
Ingredients for base;
- 3 dl cashews
- 150 g fresh medjool dates
- salt
Ingredients for filling;
- 3 dl cashews, soaked in water overnight
- 2 lemon juice
- 1 tsp vanilla powder / seeds or extract. I used organic vanilla powder.
- 1 dl melted coconut oil
- 0,5 dl organic honey
- 3 tbsp acai powder
- 3 dl organic blueberries
- decorations on top, I used blackberries and coconut flakes

Step 1: You need two cake tins (diameter 12 cm) with removable bottom or one bigger.

Step 2: Mix all base ingredients in the food processor. Put the cake base mixture into cake tins. Put them in fridge when starting to make filling.

Step 3: Mix all ingredients (cashews without soaking water) for filling in the food processor, about 5 min. Take the half of the filling and put to cake tins on top of base.

Step 4: Now add acai powder and bluerries without the juice (I used melted frozen blueberries) to food processor with filling what is left after step 3. Add acai blueberry filling now on top light cashew filling. Put in the fridge for min 1 hour or freezer. I kept these in the fridge 3 hours. If you put to freezer it starts to melt and doesn´t look so pretty.
