Beet Hummus – Recipe

Beets are an ancient, prehistoric food that grew naturally along coastlines in North Africa, Asia, and Europe. Originally, it was the beet greens that were consumed; the sweet red beet root that most people think of as a “beet” today wasn’t cultivated until the era of ancient Rome.

By the 19th century, however, the natural sweetness of beets came to be appreciated and beets began to be used as a source of sugar (reportedly, Napoleon was responsible for declaring that beets be used as a primary source of sugar after the British restricted access to sugar cane)

Beets have many health benefits. It´s undervalued root, inexpensive and you can use it many ways. I use quite often beets in my kitchen as  grated or cooked for salad, roasted for soup or juiced with fresh ginger.

  5. Rich in nutrients and fiber
  6. Detoxification support

I made my beet hummus from cooked beets, most people use pickled beets for this, these are including sugar. I have to admit I forgot to take aside few chopped beets for decoration to put on the top. I just love beet and hummus, what a beautiful combination. You can also add chickpeas to this recipe if want to. Some recipes are including also lemon juice but I decided to leave it out. I cook pretty much with my intuition.

Beet Hummus – Recipe

Time; 45 min

Servings; several

Ingredients;

  • 3 big beets
  • water
  • 2 tbsp tahini
  • 2 garlic cloves
  • 1 organic root veggies stock cube
  • 2 tbsp organic olive oil
  • ionized himalayan salt
  • black pepper
  • jeera

Instructions;

  • peel and chop beets, cook them in water with root veggie cube stock for 30 min or  until medium soft
  • add cooked beets to food processor or to blender. I used food processor. Add other ingredients except olive oil to also food processor, run until soft then add olive oil and run few seconds.
  • hummus is ready to use

When I make hummus I always make some extra to use for different foods.
